The ingredients needed to make Chicken Masala:
  1. You need 250 gms chicken
  2. Provide 1 medium potato
  3. You need 2 medium onions
  4. Use 2 small tomatoes
  5. Use 2 green chilies
  6. Take 8-9 garlic cloves
  7. Get 1 inch ginger
  8. Prepare 2 tsp turmeric powder
  9. Get 2.5 tsp red chilli powder
  10. Prepare 1 tsp cumin powder
  11. Provide 1 tsp coriander powder
  12. You need 2 tsp Kashmiri red chilli powder
  13. Get 1/2 tsp garam masala powder
  14. Take 1 tsp kasuri methi
  15. Take 1/2 tsp sugar
  16. Take 2 bay leaves
  17. Prepare 1 dry red chilli
  18. Provide 1 small cinnamon stick
  19. Take 3 cloves
  20. Provide 2 cardamoms
  21. Prepare 4 tsp whisked curd
  22. Prepare Handful chopped coriander leaves
  23. Prepare 1.5 cup warm water
  24. Prepare Oil as required
  25. Get Salt to taste
Instructions to make Chicken Masala:
  1. Marinate chicken pieces with 2 tsp of whisked curd, 1 tsp each of ginger garlic paste, 1/2 tsp turmeric powder, 1/2 red chilli powder, little salt and oil for at least 2 hrs.
  2. Smear potato chunks with 1/2 tsp turmeric powder, 1/4 tsp red chilli powder & very little salt and fry it till golden in colour.
  3. Heat oil in a pan, add 1 roughly chopped onion fry it for 2 minutes, add ginger and garlic, fry it for another 2-3 mins, add roughly chopped tomatoes, little salt and fry everything well for about 3-4 mins. Cool this mixture and make a smooth paste by adding little water.
  4. In the same pan, add some more oil, add the dry red chillies, bay leaves, cinnamon stick, cardamoms & cloves fry it a bit. Add the remaining finely chopped onion, add little sugar and fry it well for 3-4 mins.
  5. Next add the ground paste and cook the masala well for next 3-4 mins.
  6. Next lower the flame, add the remaining turmeric powder, red chilli powder along with cumin powder and coriander powder, add little water at a time and cook the masala well. Add some Kashmiri red chilli powder and cook the masala well for about 5-6 mins.
  7. Next add 2 tsp of whisked curd, mix it well and cook it for 2-3 mins, add the marinated chicken and fry it on a medium flame for about 5-6 minutes.
  8. Next add salt to taste and the fried potatoes and mix everything well.
  9. Add 1 cup of warm water, cover and cook on a low until the chicken and potato are completely cooked. Lastly add some slitted green chilies, kasuri methi, garam masala powder and chopped coriander. Cover and cook it for another 2-3 minutes and it's done.

Line a high-sided baking pan or roasting tray with parchment paper.
