The ingredients needed to cook Dahi Bhalla:
  1. Provide 2 cups urad dal
  2. Get to taste Salt
  3. Prepare 1 cup Fresh curd
  4. You need As required Oil for frying
  5. Take 3 cups Water
  6. Use 1/2 cup roasted cumin powder
  7. Use 3 spoons red chilli powder
  8. Prepare 1/2 cup pomegranate
  9. Get 2-3 green chillies
  10. You need 1 cup fried peanuts
  11. Get 1 tbsp ginger
  12. You need Pinch asafoetida
  13. Prepare Handful Coriander for garnishing
Instructions to make Dahi Bhalla:
  1. Soak the urad dal overnight or for at least 4-5 hours. Drain them.
  2. Grind the urad dal, green chilies, ginger, cumin and asafoetida with little water to a smooth fluffy batter..
  3. Briskly & vigorously stir the batter for a minute or two with a spoon or spatula. This makes the batter more fluffy and light. As a result, you get softer and porous vada. Add salt as per your taste.
  4. Heat oil for deep frying. Either drop the batter with your hands or with a spoon in medium hot oil. Fry the vada in batches till crisp and golden.
  5. Drain the vada on paper towels.
  6. When they are still warm, add the vada in water (at room temperature) and let them soak for 18-20 minutes.
  7. Press each soaked vada between your palms to remove water. Gently press or else you might end up breaking them.
  8. The vada will be increased in size as well as their colour will be changed.
  9. Press all the soaked vada this way and keep them aside in a plate.
  10. Beat the chilled curd/yoghurt till smooth.
  11. In a large serving bowl, arrange the vada.
  12. Pour the beaten curd.
  13. Sprinkle with red chilli powder, roasted cumin powder and lil salt.
  14. Now refregerat it for 1 hour. Or you can serve immediately.
  15. Tips : To get a good soft urad dal vada, remember to soak the lentils overnight. Grind the batter really well with little water. Also remember to use fresh yoghurt. I used homemade yoghurt.
  16. Serve it with green or tamarind chutney (optional), roasted cumin powder, red chilli powder, fried peanuts and pomegranate. Lastly garnish with coriander.
