  13. Prepare 1 tsp coriander powder
  14. Provide 1 spoon cumin powder
  15. Get 1/4 tsp garam masala powder
  16. Prepare 1/4 tsp curry powder
  17. Prepare 1/4 tsp fenugreek seeds powder
Instructions to make Brinjal gravy:
  1. First slit all the brinjals. Grind onion,fennel seeds,cinnamon clove and tomatoes to a coarse
  2. Then pour oil in the pan stir fry the brinjals for a minute
  3. Remove it from the pan and keep it aside. In the same pan put cumin powder.
  4. Then add ginger garlic paste. Fry for a minute. Then add the coarse paste and fry for five minutes.now add all the powders. Pour water and cook with the lid on for five minutes.
  5. Remove the lid and add brinjals. Add little water if required. Cook for five minutes with the lid on. Then remove the cover and stir well and fry for minute.
  6. Give a final touch with fenugreek seeds powder (homemade) and finely chopped coriander leaves
  7. Brinjals gravy is ready to be served with chapati

And bring it to one boil. If you are adding water, let it simmer for a few more minutes. Add chopped brinjal, turmeric powder, pepper powder, sambar powder, Garam Masala, curry powder, hing and salt to taste.
